Italian Salad


  • 1 cup cooked beef or lamb, diced
  • 1 cup cold cooked ham, diced
  • 1/2 cup drained diced beetroot
  • 1/2 cup crisp raw apple
  • 1/3 cup diced sweet gherkins
  • 2 tablespoons finely chopped white onion
  • 2 tablespoons chopped chives
  • 1 tablespoon chopped capers
  • lettuce leaf cups
  • 1/4 cup mayonnaise
  •  2 hard boiled eggs
  • 2 tomatoes
  1. Combine the first 8 ingredients
  2. Stir together with the mayonnaise
  3. Fill into lettuce leaves, or dice lettuce into mixture, and garnish with tomato edges and egg slices
  4. Serve chilled
