- 1 cup cooked beef or lamb, diced
- 1 cup cold cooked ham, diced
- 1/2 cup drained diced beetroot
- 1/2 cup crisp raw apple
- 1/3 cup diced sweet gherkins
- 2 tablespoons finely chopped white onion
- 2 tablespoons chopped chives
- 1 tablespoon chopped capers
- lettuce leaf cups
- 1/4 cup mayonnaise
- 2 hard boiled eggs
- 2 tomatoes
- Combine the first 8 ingredients
- Stir together with the mayonnaise
- Fill into lettuce leaves, or dice lettuce into mixture, and garnish with tomato edges and egg slices
- Serve chilled
