- 250 g can salmon
- 2 teaspoon lemon juice
- 3 hard boiled eggs,chopped
- 1 onion, finely diced
- l 1/2 tablespoons flour
- 1 egg
- Dry breadcrumbs
- Butter
- Salt and pepper
- Drain and mash salmon, reserving the liquid.
- Mix salmon, hard-boiled eggs and finely diced onion.
- Add flour and bind together with salmon juice, lemon juice and lightly beaten egg.
- Season with salt and pepper.
- Form mixture into small balls.
- Coat fish balls with breadcrumbs.
- Shallow fry.
- Serve hot on toothpicks.
