- 2 cups Rice Bubbles
- 125 grams white vegetable shortening (copha)
- 1/2 cup coconut
- 1 cup soft icing sugar
- 2 tablespoons cocoa
- 6 drops vanilla essence
- Set out 19 paper cups on a tray
- Sift the icing sugar and mix with the Rice Bubbles, coconut and cocoa
- Gently heat the copha, but do not let it boil
- Pour into the dry ingredients, add vanilla essence and mix well
- Spoon into the paper cups and allow to set
